Chef Dennis Cruz, who creates our weekly workplace dining menus, said that “Our dishes are designed around what’s best in the market right now, which means seasonal ingredients that are readily available and often locally grown or locally sourced. I buy from local vendors as much as possible.”
Building dishes around seasonal ingredients means using products that are readily available, with produce at peak ripeness and of high nutritional value. Seasonal menus offer variety and a sense of “ooh, what are we getting to choose this week” excitement. It also adds inspiration in the kitchen, as Chef Dennis and his culinary team experiment with what they’re finding in markets to create new menu items.
Seasonal themes and custom catering
Offering seasonal menus also means developing themed menus and custom orders that align with holidays and special months. For a New York City company, Chef Dennis recently prepared an Asian menu for a custom Chinese New Year office lunch. It featured all the flavors and seasonings of Chinese cuisine, plus his tapioca coconut dessert with mango and sweet sesame rice balls with red bean paste (his original recipe). He included a Trinidadian stew with dumplings on a recent weekly workplace dining menu, in honor of Black History Month. Latin dishes will show up during Hispanic Heritage Month and so on.
Workplace dining and corporate catering
